Cookbook Corner: A Toast to Roasts

CookBookNewer350Roasting is a method of cooking that works by slowly exposing foods to a dry heat. It is typically associated with foods that already have structure, such as meats and vegetables. Baking is also accomplished by use of dry heat (no liquids to convey the heat), but is more often associated with pastries, cakes, pies, etc. — foods that set up when baked. Autumn may bring some cooks, who have been grilling or roasting (rotisseries) outside, indoors to a kitchen warmed by the oven. This month’s cookbooks offer seasonal recipes for roasting and more.
